DISHING IT OUT: Apple dumplings a hit at the fair
The theme at the Redwood Acres Fair this summer was “Humboldt Made.” With record-breaking crowds of 37,000 at the weeklong event, local never tasted so good. I attended for the sole purpose of watching Joy Frasier demonstrate the making and baking of her famous apple dumplings. The audience was rewarded with samples of the puffy dumplings piping hot out of the oven.
A staple at Boehm's Café run by Frasier's mother, Mary Boehm, the dessert was a popular dish from 1945 until December 1964, when the infamous flood came and washed the café away.
Frasier's fruit dessert was cooked in her mother's own secret family recipe, “Sassy” Mary's Cinnamon Sauce. (Frasier doesn't share the recipe for the sauce but she did divulge that one of the ingredients is Red Hot candies, available in bulk at WinCo Foods in Eureka. ”Cliff Clendenen suggested using Ida Reds for the apple dumplings,” said Frasier. “They are a good cooking apple. For the demonstration at the Redwood Acres Fair, I used Gala and Fuji apples. I don't advise using Delicious apples just because my mother never did. I also use coarsely grated lemon zest inside the dumpling. Don't be stingy with the cinnamon or butter, either.”
Boehm's Café was located on the Avenue of the Giants in Pepperwood and offered such specialty soups as Mary's homemade split pea with ham. At the age of 10, Frasier started working at her mother's café.
”I peeled spuds and apples mostly,” she said. “I tried to stay out of the way. We served the townspeople and also citizens from the surrounding areas of Shively, Holmes Flat and Weott.”
”There were lots of vacationers during the summer months and the fishing season on the Eel River,” said Frasier. “Many of the sport fishermen stayed at the motels in town and came to our place for my mom's pies and apple dumplings. Sometimes they would buy a whole pie, take it back to their room and bring the pie plate back the next night.”
”No package stuff here,” said Frasier. “It was just good old American food. Dad made real homemade gravy for the mashed potatoes. Dinners varied with choices of rib-eye, T-bone or filets. There were roasted meats made from the whole round of beef or leg of pork.
