"We pick every morning," Hanson said, "it is absolutely fresh, the best for our customers."

And with corn, fresh is best.

"Some varieties will hold their flavor for a couple of days, but it's best the same day," said Steve Verrill, owner of Verrill Farm in Concord.

The early varieties have slighter smaller ears than the later ones, which are harvested through mid-October. Whatever the variety, the aim is the same.

"You want a nice blend of sweetness and corn flavor, with a tender kernel," Verrill said.
